This is a favorite recipe of my cousin’s for a delicious dip to bring as an hors d’oeuvres for a summer BBQ or get-together. However, it is so yummy, you can really use it ALL year round!
It is really light & sweet & to me, addicting! My mom made it last weekend for a family party and I am so bummed I forgot to snap a picture of it because it is so colorful! You will have to envision these pretty colors in your head as you read the ingredients…
Ingredients:
1 can black eyed peas, drained
1 cup frozen white corn
1 small jar red pimentos
1 large red pepper chopped into very small pieces
4 green onions chopped into very small pieces
2 firm but not too ripe avocados cut into small pieces (add to dip right before serving)
Marinade:
¾ cup sugar
½ cup rice wine vinegar
½ cup vegetable oil
1 Tbsp. Tiger sauce
Salt and pepper to taste
Mix ingredients together and then pour marinade mixture over ingredients. Stir and refrigerate for at least 3 hours. Right before serving, drain some of the oil off so it is not so runny. Add avocadoes and stir gently.
Serve with tortilla chips – the scoops work best.
Then, watch your guests take a scoop and exclaim YUM as they go back for more! Have a yummy weekend everyone! See you back on Monday!
