Broccoli Salad
This salad is a standard at Soup Plantation or at potlucks. I only recently discovered the recipe and now I make my own version all the time. A good replacement for chips.
Salad:
2 bunches broccoli crowns, cut into bite-sized pieces
1/2 sweet onion, chopped finely
1/2 cup currants (craisins or raisins)
1/2 cup honey roasted peanuts
1/4 cup fresh bacon bits
Dressing:
1/2 cup mayo
1/4 cup sugar
2 tablespoons apple cider vinegar
Mix dressing in a separate bowl and toss to coat. Refrigerate for an hour before serving. (Add the bacon right before serving to avoid it getting too soft).

It’s called "Joan’s Broccoli Madness Salad Kit." Mine has less mayo and sugar, though. I’ve even put TJ’s dried blueberries in this salad – or candied pecans.
